How can I tell if the cum has finished spurting? I don't have a lot of experience swallowing, but when I let a man ejaculate in my mouth, I never know how long the duration will be. Sometimes I'll only feel 2 to 3 spurts of semen, but other times he just keeps cumming and cumming and I feel 7 to 10 spurts, which not being able to tell when he'll stop shooting can be a bit surprising. Is there any way to tell if few or many spurts are to be expected or even if he's going to spurt once more?

Yes, sometimes when you finish the blowjob with his cock still in your mouth and it's over in three thick gushes of his hot love juice. Other times he can come for what seems like his whole orgasm. One thing that can be a guide is how long the blowjob goes for (or any other stimulation) before he comes.

If he goes from flaccid to hard to hand-job to slow blowjob to a little bit a sex in there somewhere to blowjob to coming over a relatively longer period of time, that usually results in more spurts (and usually, more watery cum, provided he is well hydrated).
