When a guy comes, the come will squirt out of his cock and there will generally be a 3 or more squirts. You should be able to tell pretty easily that he has come as there will be a noticable increase in the amount of liquid in your mouth, although this amount is said to be no more than a tablespoon.
Sometimes when you are giving a guy a blowjob/handjob/etc, a little precum comes out. Perhaps this is the gooey-ness you are talking about.
